Hyatt Regency Chennai brings an exclusive decadent pop-up menu of Hakka cuisine from 22-26 November, 2023.

Along with Manish Uniyal, Executive Chef of Hyatt Regency Chennai, Manish Uniyal, Chung has meticulously crafted an exclusive decadent pop-up menu from 22-26 November, 2023.

From China to Chennai, chef Katherine Chung is all set to break the notion of what Hakka really implies with her latest offering. Collaborating with food evangelist and travel influencer, Yogita Uchil, Chung will present her expertise in Modern Hakka Chinese Cuisine during a five-day pop-up ‘Two Worlds, One Wok’ at the award-winning restaurant Stix, at Hyatt Regency Chennai

Along with Manish Uniyal, Executive Chef of Hyatt Regency Chennai, Manish Uniyal, Chung has meticulously crafted an exclusive decadent pop-up menu from 22-26 November, 2023.

This exclusive menu showcases a fusion of traditional and royal dishes, combining rarely-seen Hakka Chinese delicacies from Hakka homes with exquisite Imperial Chinese cuisines.

The original Hakka

“This is the food I cook for my family, what we eat on a daily basis, and this is what I want to showcase, to tell guests that Hakka cuisine is much more than Hakka Noodles and Chilli Chicken,” Chung said.

Among the culinary delights, guests can savour Xinjiang Spice Tossed Mutton, Typhoon Shelter Eggplant, Lettuce Wraps, Crackling Roast Pork Belly, Garlic King Oyster Mushroom to name a few. Chung has put together a delectable dessert comprising Fried Milk Custard with ice cream and Sesame Balls with ice cream.

“We believe in bringing a fresh experience to guests every few months. Each menu is unique and carefully planned so that guests can experience cuisines of different cultures from across the globe.”

Uchil has been curating menus for pop-ups for the last 7-8 years. Through her work she hopes to introduce people to the original Indian cuisine “and not the junk that is offered at most commercial restaurants. My aim is to showcase regional cuisine with heirloom recipes,” she shares.

Chung is the last generation of the Chinese settlers in Kolkata, adds Uchil. “Hakka is usually related to noodles, but she says, I am not a noodle. Hakka is a unique cuisine, which is ingredient-based and has no masalas. Their style of cooking is, of course, different,” she tells South First.
